Dry as a bone and such good value for money with complex, fresh and deliciously yeasty flavours; made the same way as Champagne with lees ageing in this bottle (each individual bottle) but for a briefer time of maturation and at a fraction of the price.
Spanish Cava is one of the world’s best value sparkling wines, made in the same way as Champagne, only typically with less lees aging time in the bottle, so that it is lighter in flavour but retains complexity – this wine is next level because it was aged for two years on lees (longer than many champagnes). Its point of difference is being made from the indigenous Spanish grapes with 60% Xarello, 20% Macabeo, 5% Parellada and 15% of other native grapes. It tastes super fresh, crisp and savoury. A great bubbly from the Iberian Peninsula.
